Sustainable development
Ledohé's continuous efforts
"Le Doré" is inspired by the nature and culture of Busan and operates in a sustainable manner.
We focus on supporting the local rural economy and protecting the environment by using local materials .
Through this, we provide customers with a special dining experience that combines the beauty of Busan with modern Korean cuisine.

Collaboration
By collaborating with local farmers and fishermen to use fresh, seasonal ingredients, we can reduce the carbon footprint of food products, support the local economy, and mitigate environmental impact. This approach guarantees the freshness of ingredients and promotes a sustainable food and beverage industry.

GreenPractice
To protect the environment, we practice strict waste separation and sort kitchen food waste into recyclable forms so that it can be used as compost by farms. We also adopt an eco-friendly approach by producing pet treats using leftover ingredients. Furthermore, we reduce the use of dehumidifiers by utilizing charcoal and minimize the use of single-use plastics by introducing biodegradable sugarcane straws. Additionally, we reduce the consumption of natural resources by using energy-efficient LED lighting and artificial flowers instead of real ones.

Responsibility
We place great importance on animal welfare and, reflecting this, prioritize the use of free-range eggs from Sancheong-gun. In our menu composition, we minimize the use of meat and instead actively utilize a variety of seafood to provide a healthy and sustainable diet. Furthermore, we source fresh, high-quality vegetables through direct transactions with farms in Gyeongsangnam-do and practice partial self-sufficiency. Adopting the use of seasonal ingredients as a fundamental principle, we strive to support the local economy and reduce our environmental impact by prioritizing locally sourced produce.
